Pasta salad

Making a meal that meets different needs at different times can be doubly difficult at weekends. Everyone has different agendas and activities over lunchtime can mean its challenging to eat together as a family.

We often have brunch late morning together as providing a more filling to fuel us through to teatime. This pasta salad is a great option as it can be eaten warm or cold and can be rustled up quickly.

I chop up avocado (always!), cucumber, tomatoes and whatever other salad bits I have. Toss in cans of tuna and sweetcorn. Add some cooked pasta and top with a couple of hard-boiled eggs.

Olives and dressing (a pesto one is fab!) are added to individual bowls according to taste. Bon appetit!
