Instant-ish oats
Overnight oats have become very en vogue of late. I admire anyone who thinks about breakfast the night before.
I suspect like many mothers, I am too busy with the evening events to consider what I am going to eat the following morning. So I have my own version of morning oats which speeds up the overnight bit.
Sort of reminds me of ‘Daddy muesli’ we used to have on Sundays as children. We bought ‘muesli-base’ from the health food shop, which was basically oats with nuts and raisins and Dad would mix it with tinned fruit in juice, fresh fruit like apple, bananas and pears, natural yoghurt and a squirt of honey.
So I soak a scoop of porridge oats in some apple juice (natural sweetener) as I’m scurrying around sorting everything else out and pull some frozen raspberries out the freezer to defrost if I haven’t got fresh blueberries.
Once I’ve had my shower and shoved everyone else out the door, I mix the swollen oats with dollop of natural yoghurt, plonk on the berries and drizzle with a little honey. Sometimes I also sprinkle on a few seeds or nuts. Yummy!
